On my recent holiday to Gambia,  I asked at the hotel where I stayed to be introduced to one of the local ladies for inspiration as to their local cuisine. I ended up with a lady by the name of Ida (she is the one in the photograph).  I accompanied her to the local market where we bought fresh fish (straight from the fishermen!!), and other necessary fresh vegetables to prepare a local dish by the name of Benachin. In other words to you and me, it is known  in the West as “Rissoto”. Though it is slightly different in preparation, overall the same principle applies.     African fish risotto – sounds wonderful. And look at those wonderful African dresses as they prepare the food in the courtyard of the house – typical African style – you can almost smell the flavours !

    How delightful. Look forward to hearing about Benachin.

    I have been to Ghana in west Africa (the first time I travelled out of Europe). What a fabulous place with great local cuisine: fish chilli sauces, foufou and the street food was amazing particularly the beautifully prepared oranges – so sweet because they have never been chilled or flown!

    Also: I love your dress! That is another thing I loved: African fashion for women is so very elegant (unlike some western styles….)
